Preparation
- Preheat your oven to 350°F (175°C) and line a 12-cup muffin tin with paper liners.
- In a medium bowl, whisk together the flour, sugar, baking powder, and salt.
- In a separate large bowl, cream together the softened butter and egg until light and fluffy.
- Beat in the vanilla extract, then gradually add the dry ingredients to the wet ingredients, alternating with the milk, beginning and ending with the dry ingredients. Mix until just combined, being careful not to overmix.
Baking
- Divide the batter evenly among the prepared muffin cups, filling each about two-thirds full.
- Bake for 18-22 minutes, or until a wooden skewer inserted into the center of a cupcake comes out clean.
- Let the cupcakes cool in the muffin tin for a few minutes before transferring them to a wire rack to cool completely.
Notes
For best results, ensure your butter is truly softened to room temperature. Do not overmix the batter, as this can lead to tough cupcakes. Once cooled, these cupcakes can be frosted with your favorite vanilla or cream cheese frosting.
