Preparation
- Pat the chicken breasts dry with paper towels; this helps create a crispy skin.
- In a medium bowl, whisk together the lemon juice, lemon zest, minced garlic, olive oil, oregano, salt, and pepper to create the marinade.
Cooking
- Place the chicken breasts in the bowl with the marinade, ensuring they are fully coated. Cover and refrigerate for at least 30 minutes, or up to 2 hours, to allow the flavors to meld.
- Preheat your oven to 400°F (200°C) and lightly grease a baking dish.
- Remove the chicken from the marinade, discarding any remaining marinade. Arrange the chicken in the prepared baking dish.
