Beef and Broccoli Stir-fry

Ingredients
  

For the Beef:
  • 1 lb flank steak or sirloin sliced thinly against the grain
  • 1 tbsp soy sauce
  • 1 tbsp cornstarch
  • 1 tsp sesame oil
For the Sauce:
  • 2 tbsp soy sauce
  • 2 tbsp oyster sauce
  • 1 tbsp brown sugar
  • 1 tsp cornstarch
  • 1/2 cup water or beef broth
  • 1 tsp minced ginger
  • 2 cloves minced garlic
Other Ingredients:
  • 1 head broccoli florets cut into bite-sized pieces
  • 2 tbsp vegetable oil divided

Method
 

Preparation
  1. In a medium bowl, combine the sliced beef with 1 tbsp soy sauce, 1 tbsp cornstarch, and 1 tsp sesame oil; mix well and let it marinate for at least 10 minutes.
  2. In a separate small bowl, whisk together 2 tbsp soy sauce, 2 tbsp oyster sauce, 1 tbsp brown sugar, 1 tsp cornstarch, 1/2 cup water or beef broth, 1 tsp minced ginger, and 2 minced garlic cloves until smooth, setting aside.
  3. Blanch or steam the broccoli florets for 2-3 minutes until tender-crisp; drain and set aside.
Cooking
  1. Heat 1 tbsp vegetable oil in a large wok or skillet over high heat.
  2. Add the marinated beef to the hot wok in a single layer and cook for 2-3 minutes until browned and cooked through, then remove the beef from the wok and set aside.
  3. Add the remaining 1 tbsp vegetable oil to the wok, then add the blanched broccoli and stir-fry for 1-2 minutes.
  4. Return the cooked beef to the wok with the broccoli.
  5. Pour the prepared sauce over the beef and broccoli, stirring constantly until the sauce thickens and coats everything, which should take 1-2 minutes.

Notes

Serve immediately with steamed rice or noodles for a complete meal.
