  • 1 large egg beaten
  • 0.5 cup bread crumbs
  • 2 tbsp mayonnaise
  • 1 tsp Dijon mustard
  • 1 tbsp fresh dill chopped
  • 1 tsp lemon juice

Preparation
  1. In a large bowl, flake the drained salmon with a fork, ensuring there are no large clumps.
  2. Add the beaten egg, bread crumbs, mayonnaise, Dijon mustard, fresh dill, and lemon juice to the salmon.
  3. Mix all ingredients gently until just combined, being careful not to overmix, then divide the mixture into 7 equal portions and shape them into patties.
Cooking
  1. Heat a large non-stick skillet over medium heat with a tablespoon of olive oil or butter.
  2. Carefully place the salmon patties in the hot skillet, ensuring not to overcrowd the pan.
  3. Cook for 3-4 minutes per side, or until golden brown and heated through, then serve immediately with your favorite dipping sauce or a fresh salad.

Notes

For extra crispiness, you can lightly dust the patties with a bit more bread crumbs before frying. These patties are excellent served with a side of tartar sauce or a squeeze of fresh lemon.
